#ZeroWasteChallenge - Days 10 and 11

We had cauliflower cheese for lunch on day 10, using the leaves and stalks as well as the florets from the cauliflower. We had some leftover bacon and a couple of shrivelled looking green chillies in the fridge, so they got tossed into the cheese sauce too. Bacon or ham always goes well in a cheese sauce (as long as you're not vegetarian), and chillies add a bit of a kick. i have a recipe for a cheese sauce for cauliflower (or macaroni) cheese here.
I had a busy day out of the house on day 11, including going tothe gymn in the morning. i used the thast of the coffee grounds bread, toasted, buttered and cinnamon sugared and wrapped in foil and it made a great recovery food for lunch along with a milky coffee.
For tea on day 11, we had some turkey mince. I wasn't sure what to do with it, but i found a recipe for turkey meatballs in a mustard and maple sauce. I didn't want the faff of making meatballs after a long day (all that rolling), so I made turkey burgers instead, but the sauce was an opportunity to use a jar of dijon mustard with a BBE of 2022. We ate the burgers with some baby potatoes (skin on), carrots, and brocolli with stalks.

I'm continuing to save veg peelings in a bag in the freezer.
I've had a bit of a fail with orange zest. i took the pith off an orange peel, and then finely slices the zest and put the zests in a jar with some sugar to infuse. Unfortunately, it looked like this after several hours:

Basically, the sugar has sucked all moisture out of the orange zest and turned to liquid. So I think I'll have to use them in some baking...
