Here at Carole's Cupboard, we've been saving our citrus peels. Once each fruit has been juced/eaten, the peels have gone into a container in the freezer. We made candied peel, first by pressure cooking the peels for 15 minutes, and then boiling in water and sugar for about half an hour.


Then you drain your peels, lay on an oven tray and leave on a low shelf in the oven for about 20 mins, while you're cooking something else in there.


We now have home made candied peel all ready for Christmas baking!


Notes:

1. The leftover syrup has also been saved in a tub in the fridge. It will probably be used in a dessert or a cake.

2. Some of the peels were overdone in the oven, and have gone a bit hard. As in previous yers, they have gone in a jar topped up with vodka to make an orange flavoured liqueur for Christmas.
