#ZeroWasteChallenge -Day 16!

Just a reminder that the equivalent of 7 billion meals of food is wasted in UK farms every year and, at the same time, 13 million people in the UK are facing household food insecurity. I'm taking on the Zero Waste Challenge to raise funds for FareShare. Every pound donated helps this UK charity to rescue surplus food from across the food industry and get vitals meals to vulnerable communities.

Today we had soup for lunch, using the ham sTock from a gammon joint I had slow cooked. I added some green split peas and also added leftover cooked vegetables: cabbage, beetroot, parsnip, peas and carrots, and the end of the gammon, chopped. All went into the pressure cooker for 20 minutes. I blended the beetroot, parsnip and cabbage (not favoured vegetables for some in the household) - I was a bit worried that the beetroot might make the soup turn pink, but no, it turned out ok, being a comforting brown colour and very tasty:
