Today I cleared out my freezer. It wasn't as bad as I was expecting, but I did find one or two things I'd forgotten about. And there is a lot of blackcurrants in there. I am predicting jams and puddings!
One nice surprise was some lamb chops.
I'm still working on using up pantry ingredients, so I decided we would have some couscous, which also helped to use up a bag of coriander from the fridge, and another lemon:

I also made a nice raita using greek yoghurt, the last of an out-of-date bottle of gherkin and dil relish, two teaspoons of a jar of out-of-date mint sauce ( both of which found lurking in the back of the fridge) a clove of crushed garlic and some salt and pepper. It worked really well and went brilliantly with the lamb. As did the couscous.

I saved the lemon I squeezed for the couscous, and as i currently have plenty of peels for marmalade I'm going to have a go at making preserved lemons. So its chopped up and currently in a jar with some salt, just doing it's thing. I will report back.
Still clearing out the pantry, I used up the last of the I-don't-know-how-old ground rice to make a nice rice pudding for dessert. That's another jar empty. Not only am I not wasting food, I'm also saving money and gaining space!
