#ZeroWasteChallenge Day 12 - Baking Day!

Today I baked some orange zest and cardamom cookies. They were intended to be shortbread, but you may recall my orange zest had liquified the sugar, and so it was hard for me to work out how much of the contents of the jar was sugar and how much was peel. Consequently, I think the mixture had a bit too much sugar in it, but they did turn out to be tasty, chewy cookies.

I also made some brownies using my son's go to chocolate brownie recipe, but I added used coffee grounds to the mixture, about 60g. I had to text my son as he had written the recipe in my recipe book, but no method nor any cooking time! The brownies were delicious, chocolatey and fudgey, and you couldn't tell there were coffee grounds in there. if you are interested, here is the recipe:
80g cocoa powder
65g flour
140g butter, melted
280g sugar
2 eggs
60g of dried used coffee grounds
pinch salt
Mix all ingredients well, and spoon into an 8"x8" tin lined with baking parchment or greaseproof paper (I used a 6"x8" tin, so had to increase the cooking time by ten minutes)
Bake at 170C for 30 minutes or until a skewer comes out clean.
Cool completely and cut into squares.

Tea on day 12 was roast chicken and veg. The bones have been saved in a box in the freezer for making stock, as were or the veg peelings.
