Zero Waste Challenge - Days 3 and 4

Days 3 and 4 were unspectacular, but no food was wasted. We had a nice beef casserole for tea on day 3, and all the veg peelings have either gone into the peelings bag in the freezer, or into the onion/garlic skin tray for drying out in the oven.


We really enjoyed our unconventional mango trifle (above), made largely from old ingredients found in the pantry (see day 2 blog), and there was enough left over for pudding on day 4.


On day 4, I finished off the crust of an old loaf as toast for breakfast. My other half had the leftover casserole for lunch, as I was out for the day. Chicken was on the menu for tea; I popped into the supermarket on my way home and in the reduced cabinet was a bag pf pak choi, a bag of bean sprouts and a bag of fresh noodles. A stir-fry presented itself, so I added a chopped pepper, a small sliced onion, chopped garlic and soy sauce, and we had it with our spicy sticky chicken. Yummy!

Veg trimmings were saved as on the previous day.


I saved the day's coffee grounds to make brownies. I think I may also have a go at making some coffee bread.


I've been saving clementine peels for making marmalade next week or the week after.


I've got quite a collection of veg peelings in the freezer now, i think i'll be making some veg stock soon!


No food waste for days 3 and 4!
