Yummy home-made hummus

With this lovely warm weather, here's a recipe for hummus. You can eat it with pitta bread, carrot sticks or strips of pepper or whatever vegetable takes your fancy. It's also good as a sandwich filling along with lettuce, grated carrot, cucumber or all three! It's so easy and takes less than 5 minutes.

Drain and rinse a can of chick peas. Place in a bowl and add a clove of coarsely chopped garlic, juice of half a lemon, a tablespoon of tahini paste, a pinch of sea salt and some freshly ground black pepper.

With a stick blender, pulse blend the ingredients until smooth. If the mixture is a bit stiff add water to the mix, a few drops at a time, until it reaches the right consistency. Taste and add a little more salt, pepper, lemon juice or tahini if you feel it needs adjusting.

Scoop into a serving dish and serve. if you like, you can garnish with a drizzle of olive oil and a pinch of paprika or some finely chopped parsley.

You can experiment with the texture. Don't blend the hummus as much if you prefer a coarser textured hummus.

This recipe is suitable for vegetarians and vegans.
