Pumpkin Seed Snack

I love pumpkin soup, made with butternut squash. Unlike round pumpkins, butternut pumpkins have a richer flesh and a much smaller seed cavity. I still hate to throw the seeds away though, and while you can put them on your bird table, not all of the birds like them. So what you can do is spread them out in a cast iron pan with a drop of oil and some sea salt and fry gently for a about 15 minutes until they turn golden brown. You might find some of the pumpkin flesh sticks to the seeds, but don't worry, when fries it goes chewy and adds to the textural experience. Some of them will explode in the pan while frying, so you may want to use a splatter guard.
Eat as a snack, or use to garnish your pumpkin soup.
