Preparing for the FareShare Zero Waste Challenge!

This week I've been doing some prep for November's Zero Food Waste Challenge.
I've already started collecting and freezing my citrus peels to use to make marmalade and some candied peel for Christmas cake and Christmas pudding. I'll post my efforts on this blog.
I've often boiled up bones for stock, I'll have to start doing this consistently. Last week, I experimented with cooking up veg peelings to make stock, the result was a bit cabbage-y and underwhelming, but I'll keep trying see how we go.
I've got some carrot tops growing in jars as I want to have a go at carrot top pesto.
Yesterday, I noticed a pack of plums I'd bought were looking a bit tired, so I cut them up and cooked them off in the microwave with some sugar, cinnamon and cardamom seeds, and they made a nice dessert. The leftovers I had with some greek yoghurt for breakfast.
I've also been researching online for the uses of things that I would ordinarily have composted, such as coffee grounds and banana skins. I have seen some cake and curry recipes using banana skins that i plan to try, I've also seen an intriguing recipe for banana skin "bacon" which I may try.
Before 1st November, I also need to have a rummage in the chest freezer and the pantry to see if there is anything lurking in there that I've forgotten about. i can see that meal planning will be a big part of this challenge!
