Healthy Fried Chicken (AKA NBC)

This is another family favourite. It's a healthy version of fried chicken, coated in breadcrumbs with my own special blend of herbs and spices ;-) and baked in the oven.

Joint one large chicken (1.5 - 2 kg) so you have 2 drumsticks, two thighs, two wings, four breast pieces and one back piece.

The next part is a bit of a production line. One by one, dip each piece into a bowl containing two beaten eggs and ensure it is coated, then dip into a bowl of seasoned breadcrumbs consisting of 160g grated stale bread, 2 teaspoons of Marigold vegetable bouillon powder, 2 teaspoons garlic powder, tsp dried mixed herbs, half tsp black pepper, 1 tbs paprika and a pinch of chilli (optional). Again, make sure each piece is well coated.

Place each piece of egged, breadcrumbed chicken on an oiled baking sheet. Once all done, bake in the oven at 180 C for 45 mins - 1 hour.

This is delicious served with garlic bread and a salad.

Notes:

  • This is a great recipe for using up bread. If you freeze your bread, or let it go really dry, then it grates easily.

  • Fresh bread can be made into breadcrumbs by whizzing in a food grinder for a few seconds (this doesn't work well with hard stale bread).

  • If you don't have enough breadcrumbs, you can add crumbled crackers, oatcakes or even cornflakes.
