Days 6 and 7 - Another out of date meal, black bread and butter pudding, and vegetable stock

Browsing the reduced section at your local supermarket presents a similar challenge to the "Ready Steady, Cook!" programme. On day 4, a fairly obvious stir fry opportunity sprang out. On day 6, I popped in for milk, but exited also with a pack of mini chicken fillets and a pot of cream, courtesy of the reduced fridge.


I had a think, then chopped up an onion, courgette, aubergine and garlic and sweated them in a cast iron casserole for about 20 minutes, with salt and pepper some paprika. Then i added the chicken, the remains of a tin of tomatoes that had been lurking in the fridge and half of the carton of cream, and cooked for another 20 minutes, The result was a sort of creamy meditterranean checken stew. Unfortunately I forgot to photograph it. However, there's enough left over to form the basis of a meal (probably soup) on another day:


On day 7, I still had half a pot of cream, so I used it with some of the black coffee bread to make a bread and butter pudding, along with the last 2 eggs from a box. It worked really well.


Before bed, I threw my collection of frozen veg peelings into the slow cooker to cook overnight. I'll report back on this tomorrow.
