Days 27 and 28: Soup from leftover casserole from leftover chicken...

Welcome to the world of reincarnated leftovers! Tea on day 27 of the #ZeroWasteChallenge was chicken casserole made from leftover roast chicken, celery, carrot, potatoes, lentils, stock from boiled ham bones, plus some of my overstock of orzo paste to help thicken it up.


On day 28, leftover casserole became minestrone soup for lunch, with the addition of a tin of chopped tomatoes and some bean cooking water:

It's definitely worth considering, when making or planning a meal, whether any leftovers could form the basis of a future meal, and whether those leftovers are freezable (there's nothing worse than saving leftovers, and then finding they have gone off before you use them up) as this will determine when you make that second meal.
