Counting down to the Zero Waste Challenge!

I've been doing more preparation for the #ZeroWasteChallenge .


I was away for a couple of days recently, so I had to clear out the fridge of anything that might go off. A small container of leftover jasmine rice (I always cook too much) and some leftover cooked vegetables went into the freezer. Both could be used for soup, but I took the rice out yesterday and put it in a carserole dish with some water, powdered milk, demerara sugar, a knob of butter and some grated nutmeg. Into the oven alongside the chicken traybake for tea, about 40 mins, with a couple of stirs during cooking and the lid off for the last 15 mins to allow a skin to form. A lovely rice pudding!


I also put the skins of the onion and garlic i used for tea into a foil tray and baked it off ready to make the onion and garlic seasoning suggested by #FareShareUK. They're in a jar now waiting for more to be added before I grind them up with some salt to make the seasoning.

I've started planning meals for this week; it needs some hard thinking, as one intended dish is pumpkin soup, but what to do with the peel? If I bake/roast the pumpkin first, then apparently the peel will go soft and edible, but that means I will have to find something else to cook in the oven at the same time. Hmm!
