Chicken with Peppers

I've seen people complain online about recipes that have "too many ingredients". This is a simple and tasty dish that uses ingredients that may have in your cupboard and freezer, and it's good enough to serve to an unexpected guest. There's plenty of it, so you could freeze half, or any leftovers, for another day. This should serve 4 people comfortably, 5 or 6 if stretched with a serve of vegetables and/or rice or pasta.

Chop 2 onions and place in a large casserole pot with 1 tbs of olive oil, and fry gently. Add 800g - 1kg of fresh or frozen chicken thighs and brown along with the onions for 10 minutes or so. Add 1 tin of chopped tomatoes, 1 pack frozen sliced peppers, 3-4 cloves garlic, chopped, 2tsp vegetable stock powder, and a pinch of black pepper. Stir well, bring to the boil, and then simmer, uncovered, stirring occasionally for 45 mins to one hour.
If you like, you can garnish with some fresh basil. This dish looks nice and colourful served with a side of green vegetables. Going with the store cupboard/freezer theme, I've used peas here, but broccoli or green beans would work too, as would a green salad. You could also serve with cooked rice or pasta.
Notes:
If you like, you can reduce the garlic content.
You can use fresh, rather than frozen, peppers for this recipe,and this may be cheaper if they are in season.
As an alternative to rice or pasta, dauphinoise potatoes would also work well.
