Spicy Salsa

This spicy salsa is a nice side dish to go with grilled meats or as part of a hot or cold buffet meal.

Finely chop one red onion, two peppers (ideally two colours - I used red and yellow), two fresh tomatoes, and two green chillies. Put in a bowl with one crushed clove of garlic, a finely chopped bunch of fresh coriander, the juice of half a lemon, half a teaspoon of sugar, a good pinch of freshly ground black pepper, and sea salt to taste. Stir with a spoon, and serve.

This is very quick to make but its tastes better if it's left to sit for a while (up to 24 hours) to let the flavours blend together. However you can serve immediately.

Notes/variations:

You can vary the quantities of any of the ingredients, leave out any you don't like, and/or add additional ones. Diced cucumber works well, as does chopped avocado.
