Owen's Salt and Chilli Pork

This dish is one my youngest son cooks all the time and it really is delicious while being a lot healthier than what you might get at your local Chinese takeaway. With a lot of chilli and hint of garlic this is the one for you Chinese food lovers. Serve on freshly cooked white rice for a wonderful meal.
Makes 4 servings
Coating for Meat
1 cup Flour
2 tsp Chilli flakes
2 tsp Salt
2 tsp Pepper
Ingredients
400g pork shoulder or belly, sliced into around 1 inch cube pieces
2 whole onions, chopped into rough pieces
2 Peppers of your choice, sliced
2 whole chillies, chopped (de-seeded if you don't like it spicy)
2 cloves of garlic, crushed
1 tbsp of any oil to fry coated meat
A little bit of brown sugar, to taste
Method
Start by mixing all of the ingredients for the coating in a small bowl or dish until they are well incorporated together.
Add the pork to the bowl with the coating in small batches and use a spoon or your hands to ensure it is well covered.
When all the pork is coated pour the oil into a saucepan and bring to a high heat, when the oil starts to shimmer add the pork in a single layer and allow to brown on one side (around 3-4 mins), then repeat on the other side.
Once all the pork has become nicely browned and crispy, add all of the other ingredients, except for the brown sugar, and stir.
Once the onions and pepper have started to become soft, add the brown sugar and give a quick stir.
Cook on high heat for around 5 minutes or until the onions and peppers have reached your desired texture, and serve over white rice and enjoy!
